First for both items and I can still close my eyes and taste it. I am quite pleased with this purchase.
I probably over cooked the first one at medium. The second at medium rare was much better.
I’ll never buy meat from the grocery store again. This is honestly some of the best meat I’ve ever tasted. You can truly tell the difference in every product from Brown & Pearcy. If you’re unsure, start with the burgers—and once you do, you’ll want to try everything else they offer!

Great flavor. Very tender, marbled and a little less leaner than the grain fed beef pack which makes it work perfectly in a meatball or meatloaf recipe.

This has to be the best sausage around. I tried it before and had to order 10 more pounds! They come in 1 pound, vacuum sealed packs for freshness. Just take it out of the freezer the day before and thaw in refrigerator. For quick thawing, place in basin of cold water and change water every 30 minutes (I go longer) until defrosted. This usually takes 1 1/2 - 2 hours for the quick defrost in the vacuum seal bag. Fresh, loose bulk sausage ready for breakfast or any other recipe!! I can't wait to make sausage gravy with this.
I really enjoyed the ham even though I am not a ham person. They are usually just you darned salty. This was not overly salty, and mildly flavored withoutout that commercially produced chemical taste. I smoked it low for about 4 hours to add that some hickory, cherry, apple and pecan wood flavor I love. Added a maple sugar/apricot/apple juice glaze at the end. It was ender, juicey. not overly fatty with wonderful flavor. The half ham is plenty for two people with lots of leftovers. I will get this again.
