This recipe turns a simple chuck roast into rich, fall-apart shredded beef that’s bold, juicy, and packed with flavor. It’s hands-off, forgiving, and feeds a hungry crew.
Ingredients:
3–4 lb Brown Pearcy Chuck Roast
1 onion, sliced
4 cloves garlic, smashed
1 cup beef broth
Juice of 2 limes
1 small can green chiles
2 tbsp olive oil
1 tbsp chili powder
2 tsp cumin
2 tsp smoked paprika
1 tsp oregano
Salt & pepper
Instructions:
1. Season the Roast
Pat the chuck roast dry. Season generously with salt, pepper, chili powder, cumin, smoked paprika, and oregano. Don’t be shy — this is where the flavor builds.
2. Sear for Depth
Heat olive oil in a large skillet over medium-high heat.
Sear the roast on all sides until deeply browned. This step locks in flavor and builds that rich base.
3. Slow Cook
Transfer the roast to a crockpot. Add:
Sliced onion
Garlic
Beef broth
Lime juice
Green chiles
Cook on:
Low for 8–9 hours, or
High for 5–6 hours

4. Shred & Soak
Shred the beef directly in the crockpot and let it sit in the juices for 10–15 minutes so it soaks everything back up.
How to Serve:
Pile the shredded beef into warm tortillas and top with:
Fresh avocado, Cilantro, A squeeze of lime, Diced onion, Cotija or shredded cheese, Your favorite salsa.
