We double grind our steaks to make our incredibly popular 90/10 prime ground beef. These sliders are the perfect blend of simple and sophisticated: crisped edges, melty cheese, and a punchy garlic aioli that makes you wonder why you ever settled for fast food. They’re built for summer nights, backyard bragging rights, and second helpings.
Ingredients:
1 lb Brown Pearcy Gourmet Ground Beef (90% lean)
1 large sweet onion, thinly sliced
2 tbsp butter
Salt & pepper
Slider buns or brioche rolls
A few slices of sharp cheddar
Arugula or baby greens (optional, but adds a bite)
Garlic Aioli:
1/2 cup mayo
1 garlic clove, minced
1 tsp Dijon mustard
1 tsp lemon juice
Directions:
Caramelize those onions
In a pan over medium-low heat, melt the butter and toss in your sliced onions. Let them slowly caramelize for 20–30 minutes, stirring occasionally. Add a pinch of salt to help them sweat.
Make your garlic aioli
Mix mayo, garlic, Dijon, and lemon juice. Let it sit in the fridge to let the flavors develop.
Form the smash balls
Take 2 oz portions of ground beef and roll into loose balls. Season with salt and pepper.
Sear and smash
Heat a cast iron pan or griddle until ripping hot. Place a beef ball on the pan and smash it flat with a spatula (press hard!). Cook for 1–2 minutes until edges are crisp, flip, add cheese, and cook another minute.
Assemble like a pro
Toast your buns, slather with garlic aioli, add your smash patty, caramelized onions, and arugula.
