Slow-Roasted Pork Tenderloin with Apple Chutney

Ingredients:
- 1 Brown Pearcy Pork Tenderloin
- 2 large apples, peeled and diced (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- Sea salt and freshly ground black pepper

Instructions:
- Preheat your oven to 300°F (150°C). Season the pork tenderloin with salt and pepper.
- Heat a large oven-safe skillet over medium-high heat. Sear the tenderloin on all sides for about 2-3 minutes per side until browned.
- Transfer the skillet to the oven and roast the pork for about 45 minutes to 1 hour, or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.
- While the pork is roasting, make the apple chutney. In a saucepan, combine the apples, brown sugar, apple cider vinegar, cinnamon, cloves, and a pinch of salt. Bring to a simmer over medium heat.
- Cook the chutney for 20-25 minutes, stirring occasionally, until the apples are soft and the mixture has thickened.
- Slice the pork and serve with a generous spoonful of apple chutney on top. Complement with roasted root vegetables or a side of asparagus for a balanced and elegant meal.
