  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and sliced into 1-inch rounds
  • 3 medium Yukon gold potatoes, peeled and cut into 1½-inch chunks
  • 2 ribs celery, sliced
  • 3 cups beef stock (preferably homemade or low-sodium)
  • 1 cup dry red wine (optional, or substitute with more beef stock)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 1 tsp smoked paprika
  • 1 cup frozen peas (optional, for added color)

For Garnish:

  • Fresh parsley, chopped

Instructions:

1. Prepare the Beef:

  1. Pat the beef chunks dry with paper towels and season generously with salt and pepper.
